Susan's Cheesecake

Ingredients
Base
- 8 oz digestive biscuits (crushed)
- 4 oz butter
Topping
- 8 oz tub Philadelphia cheese (> 200g)
- Medium size carton (284 ml) double cream
- 2 oz caster sugar
Instructions
- Melt the butter in a saucepan and stir in the crushed biscuit. Mix well. Press into an 8 - 10 inch flan dish.
- Whip double cream until fairly stiff (but not too stiff)
- Fold the castor sugar into the cheese and add the whipped cream. Pour this onto the biscuit base and place in the fridge overnight
- Next day add the topping of your choice.
