Susan's Cheesecake

  • Makes: 1 large or 3 small



  • 8 oz digestive biscuits (crushed)
  • 4 oz butter


  • 8 oz tub Philadelphia cheese (> 200g)
  • Medium size carton (284 ml) double cream
  • 2 oz caster sugar


  1. Melt the butter in a saucepan and stir in the crushed biscuit. Mix well. Press into an 8 - 10 inch flan dish.
  2. Whip double cream until fairly stiff (but not too stiff)
  3. Fold the castor sugar into the cheese and add the whipped cream. Pour this onto the biscuit base and place in the fridge overnight
  4. Next day add the topping of your choice.
