Craig's Pasta

  • Preparation time: ½ hour
  • Cooking Time: 3 ½ hour
  • Oven Temperature: gas 6
  • Makes: 6-8 people

Ingredients

  • Extra virgin olive oil
  • 2 oz (1 bulb) garlic - diced
  • 1 small onion – diced
  • ¼ lb (250g) mushrooms – diced
  • 2 x 822g tomato sauce
  • Basil
  • Cilantro (coriander)
  • Oregano
  • Parsley
  • 2 x 411g diced tomato
  • 1 x 340g tomato paste
  • Granulated sugar
  • 2 lb rigatoni
  • 250 g mozzarella

Instructions

Pasta Sauce

  1. Add ½ cup extra virgin olive oil to pan and heat gently.
  2. Dice all vegetables and add to pan. Simmer.
  3. Add and simmer for 8 – 10 minutes
  • 1 tbsp basil
  • 1 tbsp cilantro (coriander)
  • 1 tbsp parsley
  • ¼ tsp oregano
  1. Add tomatoes
  2. Add 1 level tbsp granulated sugar
  3. Bring to boil and simmer for 1 hour
  4. Add 2 tbsp basil
  • 1 tbsp cilantro (coriander)
  • 1 tbsp parsley
  1. Simmer for further 2 hours.

Pasta

  1. Add olive oil and 1 tsp salt to cold water and bring to boil.
  2. Add pasta and continue boiling with lid off for 10 minutes.
  3. Don’t rinse pasta.
  4. Add pasta to tray, cover with sauce and mozzarella.
  5. Place in middle of the oven and bake for 20 minutes at gas mark 6.
