Craig's Pasta

- Makes: 6-8 people
Ingredients
- Extra virgin olive oil
- 2 oz (1 bulb) garlic - diced
- 1 small onion – diced
- ¼ lb (250g) mushrooms – diced
- 2 x 822g tomato sauce
- Basil
- Cilantro (coriander)
- Oregano
- Parsley
- 2 x 411g diced tomato
- 1 x 340g tomato paste
- Granulated sugar
- 2 lb rigatoni
- 250 g mozzarella
Instructions
Pasta Sauce
- Add ½ cup extra virgin olive oil to pan and heat gently.
- Dice all vegetables and add to pan. Simmer.
- Add and simmer for 8 – 10 minutes
- 1 tbsp basil
- 1 tbsp cilantro (coriander)
- 1 tbsp parsley
- ¼ tsp oregano
- Add tomatoes
- Add 1 level tbsp granulated sugar
- Bring to boil and simmer for 1 hour
- Add 2 tbsp basil
- 1 tbsp cilantro (coriander)
- 1 tbsp parsley
- Simmer for further 2 hours.
Pasta
- Add olive oil and 1 tsp salt to cold water and bring to boil.
- Add pasta and continue boiling with lid off for 10 minutes.
- Don’t rinse pasta.
- Add pasta to tray, cover with sauce and mozzarella.
- Place in middle of the oven and bake for 20 minutes at gas mark 6.
