Chilli

  • Cooking Time: 2 hours and 15 minutes
  • Makes: 12 (6 x 500 ml tubs)

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 bulb garlic
  • 6 green chillies – de-seeded and chopped
  • 2 green peppers - de-seeded and chopped
  • 2 onions - chopped
  • 2 carrots - diced
  • 250g mushrooms - chopped
  • 1 x 410g tin kidney beans
  • 4 x 400g tins tomatoes
  • 6 tbsp lentils
  • 1 tbsp caster sugar

Instructions

  1. Heat oil.
  2. Add chillies, carrots, garlic and onions. Cook gently for 3 minutes.
  3. Add all other ingredients and bring to the boil.
  4. Boil for 10 minutes.
  5. Simmer for 2 hours.
